Grade B vanilla is called "Extract Grade" given its brittle, cracked and often broken dry characteristics. It is full of oil and makes delicious vanilla extract or it can be ground for vanilla powders and sugars, but it cannot easily be used for many baking applications or for harvesting caviar to make vanilla bean paste, so it is less expensive.
